Sear Steakhouse - Gems Of The Skyline On Fifty Raffles Place

Fifty Raffles Place (50RP) is a multi-concept collection of fine dining restaurants, sexy lounge bar, and exclusive lifestyle parties. SEAR is one of the hidden concepts that is lies within 50 RP. Nestled in the core of Singapore's Central Business District, SEAR is a glass penthouse restaurant bar located on the 45th level of Singapore Land Tower providing panoramic views of the city and overlooking the Marina Bay waterfront, as well as the civic and financial districts. 

Joining SEAR to bask in the limelight are Empire which is a penthouse lounge, Angie's Oyster & Champagne Bar and finally Teikoku (opening in 2015) a promising Japanese inspired sake and tapas dining concept is set on the 46th level. 
Decked out in dark wood and warm lighting, SEAR has set its sights on impressing its customers with an impeccable combination of top quality steaks and a priceless view. Open for both lunch and dinner, diners can expect a fulfilling meal of prime cut meats skilfully prepared by Executive Chef Claudio Sandri and this team. 

The S$6,000 price tag Certified A4 Kobe rib eye (2kg) and Sturia Vintage Caviar (300g) Surf & Turf is a showstopper combination at SEAR that may raise some eyebrows since it is an ultimate meal fit for a king; but to some, it's a splurge-worthy piece of meat that you wouldn't mind sinking your teeth into and putting a serious dent in your wallet. 

While you may not be able to afford the 2kg sheer size beef, you can still pamper yourself and grill up the prized A4 Kobe rib eye for a fraction of the whole (S$340 for 250g), or some of the slightly more chewy budget sirloin (S$88 for 300g). 
SEAR promises to deliver only the best meats on its customers' plate; it has imported two  charcoal ovens from the Barcelona-based PIRA well known and appreciated for bringing out the meat's intrinsic flavour and goodness.

SEAR signature sea salts - Caraway and cumin, Black olive salt and Piment d'espelette salt. Mustards - Cucumber and dill, Champagne and honey, Pommery. 
SEAR serves up well-executed steak with equally delectable accompaniments, which include Creamy sweet corn with corn kernels ($16) - a combination of charred bits and siphon creamy corn topped with shaved parmesan; Homemade lemon rosti ($15) - an invigorating mix of shredded potato sauteed with lemon juice and finished off in the oven; Maple Brussels sprouts, pig and nuts ($16) - a pancetta used for added scrumptiousness. 

Other noteworthy options include Shoestring fries ($15); Creamed spinach ($16); Baked potatoes, gruyere, smoked peck, homemade sour cream ($15); Pira roasted vegetables ($16) and Onion rings & Nori salt ($16).

It is apparent that beef is the star of the show here at SEAR, but the restaurant offers delectable seafood starters and non-beef dishes that are just as popular. 

We are always skeptical of having bone marrow as the dish is certainly not for the weak of heart. It is an undervalued treasure that few would consider it an exquisite delicacy of some sort. The split bone marrow at SEAR is a brightly-coloured dish consists of beautifully unctuous marrow juxtaposed with a tangly parsley-onion-garlic-lemon juice persillade, compressed pickled watermelon and micro green. A clever flavour combination that capitalised on the tanginess of the sauce to help cut through the rich fat.

Heartier starter choices include Charred octopus ($26) on nutty Romanesco sauce made with roast peppers and tomatoes; Dry aged steak tartar ($38) with soft poached quail egg; Diver scallop ceviche ($28) marinated in fish stock, lemon juice, sugar and herbs; Lobster cobb salad ($32) and French Tsarskaya oysters on the half shell ($52 for half dozen).

If you are dining in a big group or saving your appetite for the meat, you can order the Angie's ocean platter which is nicely served up with Maine Boston lobster, Jumbo shrimp cocktail, Diver scallop ceviche, Oysters on the half shell and Alaska King crab leg.

SEAR's Sips - When it comes to the drinks, SEAR is proud to feature a wide selection of American wines of rare vintage to choice from. Over 10 rare, world class and value-driven wines by the glasses are available and start at $16 each. 

Juices, coffee and tea might be the obvious choice for anyone looking for a non-alcoholic option. On the sweet note, diners can look forward to the tasting dessert plate from the chef's selection available at $48 for four person, or simply go for the a la carte option.

The apple pie ($16) is paired with homemade honeycomb crumble and a yoghurt sorbet; while the Cheesecake ($15) is an indulgent take on a favourite with dark chocolate bubbles, sour berries and hazelnut lime liquor. Chocolate lovers will fall in love with the Chocolate mud cake ($15) made with soft chocolate brownie and marshmallows; and for those who enjoy a tangy finish will find solace in the Cinnamon doughnuts ($14) with citrus curd and lemon ice cream; or Pira grilled pineapples ($13) served with salted coconut and coconut sorbet.

Entry level tables start at $1500 nett and VIP tables at $2500 nett. At Angie’s Oyster & Champagne bar, guests can reserve a table for $1000 nett, where they will be also entertained by a live jazz band.

Alternatively, if guests wish to simply enjoy the spectacular view of Marina Bay that the 360 degree outdoor platform at 50RP offers, an entry fee of $98 nett, which includes a complimentary glass of bubbly as well as full standing-only access indoors and outdoors.
