From 11 August 2014 onwards, Flavours At Zhongshan Park is adding 26 more items on their a la carte menu with an increased selection of appetizers, soups, western cuisine, Asian and Nonya specialties and a new “Twist of Flavours” section featuring seven creative dishes fusing oriental and western cooking methods and ingredients.
The traditional Italian risotto is given a local lift in this dish as the traditional creamy base is replaced with Asian ingredients such as laksa paste and coconut paste, and accompanied with fresh seafood such as scallops, squids and prawns.
The cooking process of this delightful local inspired dish is a lengthy 2 days, first by marinating the thick slice of pork belly for 24 hours then cooking it in sous-vide for another 24 hours to lock in the flavour and moisture before baking. The resulting dish is a fork tender pork belly with crispy skin at the top.
The duck leg is marinated with a special blend of spices created by the Chefs after much experimenting. Cooked sous-vide for 24 hours, the duck leg is then pan-fried till the skin is crispy.
This Asian style fish ‘n’ chips comprises homemade Otak Otak fried in batter and served with curry spiced flat fries and a homemade dip made of mayonnaise with peanut butter and curry powder, adding a sweet and savory hint to the palate.
The crepe batter is mixed with freshly squeezed pandan juice, giving it a subtle pandan scent. Inside the crepe is a filling of mascarpone cheese and Cempedak puree, topped with coconut foam and Gula Melaka (palm sugar) syrup. The complementing blend of aromatic Asian flavours makes this dessert a must-try.
The other two new Twist of Flavours dishes that were not featured here, the Deep-Fried Lemongrass Flavoured Crab Cake with Avocado and Pineapple Salsa – ($13.80), and the Pig’s Trotter Salad with Crispy Shallot and Sambal Belacan – ($12.80).
A local D.I.Y. burger station, ‘Ah Hood Burger Stall’ is available at Flavours At Zhongshan Park during its ‘Afternoons with Bibik’ weekend high-tea buffets, and a ‘Singapura Pasta’ section during weekend buffet brunch in the recently Halal-certified 21 on Rajah.
Additionally, due to popular demand, both Flavours at Zhongshan Park and 21 on Rajah will be extending its Sunday buffets, ‘Afternoons with Bibiks’ and Sunday Brunch respectively, to Saturdays and public holidays as well.
Sweet selections include Pulut Hitam with Longan (Black Glutinous Rice Porridge), Durian Pengat, Chocolate Pralines, Pandan-Flavoured Chocolate Fondue with You Tiao (Chinese crullers) and assorted ice-cream popsicles.
Introducing five out of the seven 'Uniquely Singapore' dishes at Flavours At Zhongshan Park.

Stealing the limelight of the buffet is the newly launched ‘Ah Hood Burger Stall’, a D.I,Y. burger station with a local twist, where guests have the freedom to create their very own burger with a wide selection of local fillings such as Satay Chicken, Minced Char Siew, Chicken Floss, Hae Bee Hiam (Dried Shrimp Chilli), Otak Otak, Mince Pork Roll, Curry Potato and Minced Pork with Spicy Bean Sauce wrapped in a Steamed Leaf Bun.
Other accompaniments at the station are sambal chilli, coleslaw, lettuce, onions and tomatoes.
The high-tea which is heavily infused with local and Asian flavours will continue to offer hot dishes such as Pan-Fried Carrot Cake, Roti Jala with Chicken Curry, Putu Mayam (a South Indian snack of rice flour noodles, eaten with desiccated coconut and palm sugar), Oyster Omelette, Mee Tai Bak Goreng (thick rice noodles), Goreng Pisang (deep-fried banana fritters) and a Laksa noodles station.
